3 Tasty recipes for banana bread

It’s almost Banana Bread Day again! And that means those old bananas with brown spots are going to come in quite handy. With a few simple ingredients you can conjure up a delicious banana bread today. Delicious with coffee and tea!

During the Corona lockdowns we all got into the habit of baking, but even now baking is still a hobby for many people. And banana bread is also very sustainable: you don’t have to throw away your old bananas. And how easy is it to make from just a few ingredients and how much the kids love it. If you are economical with the sugar, it is healthy too! There are many different recipes. This is what Ingeborg and I noticed when we were still working together at the kitchen table and both had baked a banana bread with similar ingredients, but a totally different result. In this blog we will give you several recipes for a delicious banana bread.
Banana bread by Ingeborg
Ingeborg had her banana bread inspired by Chickslovefood.
She uses:
- 3 bananas
- 200 grams of almond flour
- 1.5 teaspoons of baking powder
- 3 eggs
- bit of salt
- 2 tablespoons honey
- little cinnamon
- oil to grease
Preheat the oven to 170 degrees. Mash the bananas in a batter bowl and add all the ingredients. Mix everything well with a mixer. Grease a baking pan with oil and fill it with the batter. Bake the bread for 55 minutes.
Banana bread by Ester
Ester turns her batter into banana bread muffins.
She uses:
- 3 bananas
- 3 eggs
- 250 grams of almond flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 tablespoon olive oil
- variation: blueberries, raspberries and apple pieces
Preheat the oven to 180 degrees. Mash the bananas in a batter bowl and add all ingredients except the variation. Mix everything well with a mixer. Grease a muffin tin with oil and fill it with the batter. Finally, add the variation fruit and push a little under the surface of the batter. Bake the muffins for 30 minutes until done.
Banana bread from Allerhande
Of course, Allerhande also has a tasty recipe for banana bread. But keep in mind that this contains quite a bit of sugar, so less healthy as they above recipes. So enjoy, but eat in moderation 😉
- 250 g wheat flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 pinch of salt
- 300 g bananas
- 100 g unsalted butter
- 200 g white soft sugar
- 8 g vanilla sugar
- 2 medium-sized eggs
- 125 ml crème fraîche
Preheat the oven to 180 °C. Grease the cake tin and line with baking paper. In a large bowl, sift the flour, baking powder, cinnamon and salt. Peel and mash the banana. Blend the butter, bastard and vanilla sugar in the food processor for 20 sec until almost smooth. Run and add the eggs and crème fraîche 1 at a time. Stir through the flour mixture. Spoon the mashed bananas into the batter. Spread into the cake pan and bake for about 1 hour until golden brown and done. After 50 min. check for doneness with a skewer. If it comes out clean, the cake is done. Leave to cool for 30 min., remove from the baking tin and leave to cool on a wire rack for 1 hour.
