Pannenkoeken

november 29 is the day again: St. Pannekoek! This holiday was created years ago by Jan Kruis, creator of the popular comic strip Jan, Jans and the Children. During this holiday, the idea is actually to eat a delicious pancake at a cozy pancake restaurant. Unfortunately, that is not possible this year. To still be able to celebrate St. Pannekoek, we have the recipe for pancakes for you. With this you can make the most delicious pancakes at home.

Basic recipe for pancakes

pannenkoeken

To make pancakes, you don’t need much at all. With these ingredients, you can put 8 pancakes on the table in no time:

  • 2 medium eggs
  • 250 gr (wheat) flour
  • 500 ml of milk
  • pinch of salt (don’t forget, otherwise your pancakes will be very bland)
  • possibly a pinch of cinnamon (through the batter)
  • butter/margarine for frying the pancakes

Preparation

In advance, make sure you put a plate within reach with an inverted smaller plate in it. Also make sure you have an extra large plate ready to put on your pancake. This will keep them nice and warm.

Pancakes fry over medium-high heat. The first pancake is the trickiest; it usually fails. This is because the pan is not hot enough. Make sure the pan is warm enough. Then add the knob of butter. Add the batter and roll it around so you get a round pancake. Fry the pancake for about 2 minutes on one side. Then flip the pancake and let it fry for another minute.

Tasty toppings

Actually, you can use anything on your pancake as a topping. Do you prefer savory or sweet? As toppings, we do have some tips for you:

  • cheese, ham/cheese or bacon/cheese
  • apple and smoked chicken
  • powdered sugar, cinnamon or cinnamon sugar
  • syrup (but also try syrup with cheese)
  • jam (but also try jam with cheese)
  • baked apple with cinnamon (possibly with whipped cream and vanilla ice cream)
  • Nutella
  • strawberries or banana (or banana with Nutella)
  • roasted marshmallows and Nutella

But most of all, be creative yourself! Andne… don’t forget to put a pancake on your head!
