Tips for the tastiest Easter brunch at home

Of course, you can go out for Easter and have a big brunch out of doors. But you can also make it yourself. We dug into our cookbooks to find delicious (and easy) dishes for your Easter brunch. Even if you are not a kitchen princess, this should work!
Easter brunch at home
Sometimes it’s just fun to roll up your sleeves at home. With these easy and delicious dishes, your Easter brunch can’t fail this year! A brunch is like a combination between breakfast and lunch. So make sure your guests haven’t had too much breakfast!
French sugar bread French toast
Okay, if you are on a diet you should skip this recipe. We made it once for dessert at Christmas dinner and it was received with much cheer. This is also an ideal brunch dish. Everyone likes French toast and you can give it a special twist by using sugar bread. This is what you need for 8 to 10 people:
- a whole Frisian sugar loaf
- 2 medium eggs
- 200 ml milk
- 2 tsp cinnamon
- butter for baking
- powdered sugar
- fresh fruit if desired
Cut slices of the sugar bread. Beat the eggs and pour the mixture onto a plate. Measure out 200 ml of milk and put it in a (deep) plate as well. Carefully spoon in the cinnamon. Put a pan on the heat and melt a small knob of butter. Meanwhile, get the sugar bread through the egg and then the milk mixture and put the bread in the pan. Delicious with powdered sugar and fresh fruit!
Easter waffles
Do you have a waffle maker? Then this dish is a “breeze.” Kids will love these Easter waffles, but really, it will make everyone happy. This is what you need for 6 people:
- chocolate Easter eggs (not filled!)
- 350 grams of flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- a pinch of salt
- 2 medium eggs
- 350 ml semi-skimmed milk
- 4 tbsp sunflower oil
- waffle iron
Grease the waffle iron and preheat. Chop the Easter eggs coarsely. They will go through the batter. Beat the eggs and mix them with the milk and sunflower oil. Sift the flour and baking powder. Add the sugar and the pinch of salt. Mix everything together. Finally, add the coarsely chopped chocolate eggs. An ice cream scoop will help you make the portions in the waffle iron. Do not use too much of the mixture or you will get a flood. PS: personally, I always make waffle batter with cake batter from the store. I personally find this much tastier. Serve with whipped cream to finish it off. An Easter brunch for home doesn’t have to be calorie poor we think!
Tuna melt sandwich
A dish to lick your fingers at is the tuna melt tosti. Because tuna does not have a distinct fish flavor, almost everyone likes it! The nice thing about this recipe is that you can adapt it to what you like. This is what you need for 8 people.
- 16 slices of sturdy bread of your choice
- 640 gr tuna in sunflower oil (canned)
- 2 tbsp sambal manis
- 2 tbsp mayonnaise
- 1 red onion (in rings)
- slices of mature cheese
- 2 tbsp sweet and sour gherkins
- unsalted butter for frying
Drain the tuna, for example in a sieve. Then put the tuna in a bowl. Mix the sambal and mayonnaise and mix with the drained tuna. Spread 8 slices of bread with this mixture. Spread the thinly sliced onion rings with the pickle pieces over the tuna. Cover with the cheese slices and the “bare” sandwich. Grease the outside of the sandwich with butter and heat a pan. Fry until the cheese is melted and enjoy!
Savory muffins
Easy to make and guaranteed to be a success: savory muffins. After all, you can put anything in them, including leftovers. For 6 to 8 muffins for Easter brunch at home, you need the following:
- 150 ml milk
- 1 egg
- 125 g self rising flour
- 1,5 tsp paprika powder
- filling of your choice, think of:
- cheese (grated)
- goat cheese
- ham
- leeks
- onion
- bell bell pepper
- ham strips
- smoked chicken in strips
- zucchini
- corn
Preheat the oven to 200 degrees. Cut the ingredients of your choice small. Mix together the self-rising baking flour, egg, paprika and grated cheese. Add your favorite ingredients and put the mixture into the muffin/cupcake pan. For convenience, use two tablespoons or an ice cream scoop to spread the mixture. The mixture will still rise so don’t overfill the molds. Otherwise you can clean the whole oven later. filling 3/4 of the molds is really enough. Bake the muffins until golden brown and cooked through in about 25 minutes. Very simple and very tasty!
Carpaccio and salmon wraps
Super easy and really always a hit are wraps. You can fill them any way you want, they are ready in no time and everyone loves them. What more could you ask for? Our two favorites will be featured here, the carpaccio and the salmon wrap. This is what you need for 8 people.
- 8 wraps (ready-made)
- 2 platters of carpaccio (containing 2 portions each)
- 200 gr smoked salmon fillet
- rucula
- cream cheese
- parmesan cheese flakes
- pine nuts
- black pepper
- truffle mayonnaise
Toast the pine nuts very lightly in a frying pan. Let them cool down. Remove the wraps from the package. Brush 4 of them lightly with truffle mayonnaise. Open the bowls of carpaccio. Often the carpaccio is already nicely cut on a plastic wrap. You can put these on the wrap in one go. Saves a lot of fiddling. Spread some of the toasted pine nuts over the carpaccio. Do the same with the cheese flakes and arugula. Roll up, slice and done! Easy to make in advance! Truly the ideal recipe for an Easter brunch at home!
The salmon wraps are just as easy: lightly spread 4 wraps with cream cheese. Spread the smoked salmon over the wraps. Sprinkle with some pepper. Add some arugula, if desired. Roll up, slice and ready! Really ideal!
Stuffed eggs
Of course, eggs should not be missing at an Easter home brunch. Therefore, we have also added stuffed eggs to this list. For 8 people, the recipe is as follows:
- 4 eggs
- 1 tbsp mayonnaise
- pinch of paprika
- 1 tsp yogurt
- 1 tsp mustard
- pinch of curry powder
- fresh chives
- piping bag with nozzle
Boil the eggs hard. Quench them, peel them and halve them (lengthwise). Carefully remove the yolk from the egg and put it in a bowl. Mash this as finely as possible with a fork. Add the mayonnaise, yogurt, mustard, curry powder and paprika. Mix this well. Put the mixture in a piping bag and pipe nice rosettes into the empty eggs. A little paprika and chives on top and you’re done! Always a great success! But if you are at a complete loss, you can always book an Easter brunch at a special location.
