Treats for the picnic basket

The weather is still a little weird at times (snow at the end of March!?) but the nice weather is really coming! It is time to have a nice picnic again! Earlier we gave you tips about the nicest picnic spots in the Netherlands, now we give you tips for a well filled picnic basket! Easy and delicious, because that’s what we love!

Tuna salad sandwich

Almost everyone likes tuna salad, but often it is not really healthy because of the mayonnaise. We found a healthier variant based on Greek yogurt at Cute Recipes! What do you need to make this healthy and easy tuna salad?

  • a can of tuna in oil
  • half a teaspoon of mustard
  • pickle in small pieces (sweet and sour, to taste)
  • one small (red) onion
  • one tablespoon lemon juice
  • two tablespoons Greek yogurt
  • a little salt and pepper
  • possibly some drops of Tabasco for flavor
  • PS: also not bad with pieces of green apple in it

Actually, it is very simple after this. You let out the can of tuna and then put the tuna in a bowl. Add all the above ingredients, stir well. Delicious on a dark brown sturdy bun. Wrap it up and take it with you!

Pasta salad with melon

We found this delicious, summery dish on Lekker en Simpel. Handy to take along in a plastic container for the picnic basket! For the pasta salad with melon you will need the following:

  • 200 grams of pasta (e.g. wokkels)
  • half a galia melon
  • 4 slices of Parma ham
  • a ball of mozzarella
  • 50 grams of rocket
  • one spring onion
  • a tablespoon of pine nuts
  • 4 tablespoons of olive oil
  • 1 teaspoon dried basil
  • pinch of salt and pepper

Cut the melon into small pieces, wash the arugula and cook the pasta. Mix the pasta with the olive oil and dried basil. Then toast the pine nuts until they color slightly. Also cut the Parma ham, mozzarella and spring onion into small pieces. When the pasta has cooled, mix all the ingredients together. Delicious and anyone can make this!

Wraps with caesar salad

On Lekker en Simpel we came across another delicious dish. Stuffed wraps we already knew from the blog Easter Brunch at Home where we filled them with salmon and carpaccio. Now we have a version with caesar salad. What do you need?

  • 4 wraps
  • one smoked chicken breast
  • 4 slices of bacon
  • 100 grams of iceberg lettuce
  • 4 tablespoons mayonnaise
  • a small red onion
  • Parmesan cheese
  • possibly a pinch of pepper
  • two boiled eggs

Fry the slices of breakfast bacon without butter or oil in the pan until nice and crispy. Boil the eggs hard and slice the smoked chicken. The onion may be cut into thin rings. Top the wraps in the center with the iceberg lettuce, topped with the chicken, bacon, onion, Parmesan cheese and mayonnaise. Garnish with a few slices of egg and possibly some pepper to taste. Roll up and cut into 4 pieces. No cutlery needed!

Fruit and vegetable skewers

Kids along for the picnic? Then surprise them with these tasty and healthy snacks. These skewers are not only very easy to make, they are also very tasty and look cozy. Of course, you can use all kinds of ingredients. We have some suggestions for the picnic basket for you:

  • cucumber
  • bell bell pepper (in different colors)
  • cherry tomatoes
  • mini carrots (or those round carrots)
  • apple
  • banana
  • pineapple
  • grapes (cut in half due to choking hazard)
  • kiwi
  • peach
  • tangerine

Savory side dishes:

  • cheese cubes
  • mini bifi sausages
  • party knaks
  • ham or salami rolls (roll up a slice of ham and divide into 3 pieces)

Fresh watermelon drink

Super delicious on hot days is a homemade watermelon drink. It is very thirst-quenching and also very easy to make! For the recipe from Food and Friends, you will need the following:

  • 500 grams of watermelon (pitted and diced)
  • juice of 1 lime
  • 2 tablespoons fine granulated sugar
  • 400 milliliters coconut water

Put the watermelon in a sturdy bag, such as a sandwich bag with zip closure. Place the watermelon in the freezer and let it get thoroughly cold there for at least 3 hours. Then blend the melon in and food processor with the lime and coconut water. If you store the juice in a thermos bottle it will stay nice and cold. Plus, it won’t leak all over your picnic basket. Bring cups and enjoy!
