Restaurants Weerribben-Wieden sustainable into the future

Sustainability is here to stay today. Every little bit helps, even in your own family. But our favorite locations are also doing good when it comes to sustainability. For example, the Restaurants Weerribben-Wieden, which includes Restaurant ‘t Binnenhof, OSS&ZYL Bakery-Bubbles-Bites and Eetcafé Giethoorn, are already well on their way when it comes to sustainability. Below you can read what they have already done and what they want to achieve in the coming months.
Being sustainable: very important!
Wilco Verschuren, owner of Restaurants Weerribben-Wieden: “We think it is important to be involved with sustainability. We already have quite a few things in order and will do even more in the near future. We would like to let you, the readers of OpstapmetLisa, know what steps we have already taken and what we are going to do to be even more sustainable than we already are. And hopefully, of course, we’d love to see you back at one of our beautiful parks!”
How sustainable are we already?
“The Restaurants Weerribben-Wieden are already quite sustainable. For example, in purchasing new catering equipment, we first look at the energy label of an appliance. Efficient equipment simply doesn’t come in anymore. We will also be replacing old equipment with more sustainable equipment in phases. At the new location in Giethoorn all equipment is already fully sustainable. We are also already very conscious about heating the halls and restaurants. And all sanitary facilities have smart lighting and taps. For example, the lights only go on when someone is present and the taps turn off automatically. We have electric charging stations for guests, and we are sending out more and more information digitally instead of on paper. This is how we avoid wasting paper,” Wilco said.
With an eye to the future, what do you want?
“In the future, we want our own fleet of vehicles to also become electric where possible. We are already separating waste (glass, paper and deep-frying fat are separated, for example), but in the future we want to separate our waste completely. The problem is that the municipality is not yet fully equipped for this, but the aim is to have this fully implemented by 2023.
Sustainable in terms of our food
“Our meat and fish are sustainably caught/farmed as much as possible. We are also trying to put more and more vegetarian dishes on the menu. We are also working hard to make our disposable line completely sustainable. Our restaurants have the service to bring dishes to your vacation home, so we want to do something with that. Not only do we want to make the materials completely sustainable, we also want to inform and encourage guests to hand in the waste separately. And we are setting up our offer of buffets, barbecues and à la carte so that there is little food waste without sacrificing the right quantity/quality ratio,” says Wilco.
Experience Garden
“At Restaurant ‘t Binnenhof, plans are ready to completely convert the garden and terrace into an experience garden. The intention is that this will be made entirely with recycled materials. We want to use rainwater for watering and we want to introduce biodiversity through butterfly bushes, a bee garden, etc. We also want to give explanations to the guests. The intention is that this will also happen at the other two restaurants soon.”
The parks also become sustainable
“Not only are the three restaurants working hard to make their businesses more sustainable, the parks on which they are located will soon become sustainable as well. These are the following parks: Villapark de Weerribben (Restaurant ‘t Binnenhof), Vakantiepark Giethoorn (Eetcafé Giethoorn) and Vakantiepark Waterstaete (OSS&ZYL). So you can come and celebrate vacations at one of our parks with peace of mind!”
